As a working Mom sometimes I do not arrive home from work until 6:30. On those nights I will either throw a meal in the slow cooker before I leave for work or leave directions for the babysitter to put the casserole or meatloaf in the oven at 5:00. Then when my husband arrives home at 6:00, dinner is hot, ready and the house smells delicious.
Planning is everything. Don’t wait until 5 p.m. to begin thinking about dinner. It doesn’t have to be an elaborate 3 course meal. There are going to be days when 5 p.m. arrives a lot sooner than you expected, but if you have some meals already prepared in the freezer, it won’t be a big deal.
Depending on where you live and the season – you can pick apples, pears, plums, and berries galore. Look for an orchard or farm in your area which allows folks to ‘pick their own.’ You may be able to find blackberry bushes growing wild in public places around town as well. Then enjoy your bounty as is, in a pie or crumble, or a la mode.

I too used to be one of the ‘fast cookers’ who worked away from home. During those years I probably used my crock pot two or three times a year. We also ate way more fast-food in those days than we do now. Running around like I did from job to home to kid activity, it’s a wonder we weren’t malnourished. Dominoes did a very brisk business on our street as well.
Do some meal prep recipes early in the morning or the night before. If you’re home with the kids, you can take 15-20 mins to chop up some ingredients earlier in the day. Use nap times, or while the children are occupied with supervised activities. Kids can do a fun activity at the kitchen table while mom cooks. Then at 5 p.m., half the work will be done!
